Sometimes it’s hard to find time for yourself, especially with a toddler pulling at your selves and living at your in-laws for half of a year.  Yeah.

I’ve learned to find a little bit of peace in the stresses of day-to-day life. I know I should be cooking, cleaning, baking, working and reading, but during Liam’s nap time, the house is relatively quiet. I’m usually starving by the time I put him to bed and whip up a salad for lunch. Meanwhile, I turn on Netflix and dive into one of my all-time favorite shows, Parenthood.

I was first turned onto the show out of my love for Lauren Graham on Gilmore Girls (Yes, I was so in love with that show that we had a end of the show party when the last episode aired). Ahh…such a good one.

When I found out Lauren Graham was doing another drama/comedy show about family, I was hooked. Then, you get to know the characters and there’s something everyone can relate to in the many relationships on Parenthood. I can’t tell you how many times the show has made me laugh out loud, holding my mouth as to not wake the baby. Likewise, there have been many times I’ve cried a good cry during the show. It’s just a very well done drama.

After I enjoy my leafy greens, I lean towards a little treat to enjoy during this short moment of bliss in the middle of my day. Chocolate is always the answer. And lately, these popsicles are it.

These healthier peanut butter cup popsicles are full of chocolate and peanut butter flavor. They are also exceptionally creamy. Think fudgesicles.

As an added bonus, you can make them vegan and without any added sugar…except it won’t taste like it’s healthier because they’re so good!

Popsicles are such a nice treat because you can individually wrap them and hide them in the freezer. Come on, I know you do it too. ;-)

Healthier Peanut Butter Cup Popsicles

adapted from Earthly Feast

Ingredients

  • 1/2 cups dark chocolate chips – use vegan chocolate chips if you want vegan popsicles
  • (optional) 2 tablespoon honey or date paste
  • 1/2 cup peanut butter
  • 1 pound silken tofu
  • 1 teaspoon vanilla extract

How-To

  1. Over a double boiler or in a microwave safe bowl microwaving in 15 second bursts, melt the chocolate.
  2. Stir in the honey and peanut butter until combined.
  3. Allow the chocolate mixture to cool for a few minutes.
  4. Place the chocolate mixture and the remaining ingredients in a blender or food processor. Blend until smooth.
  5. Pour into popsicle molds with sticks.
  6. Freeze for 4 hours or until frozen completely.

Note: If you’re not making them vegan, I highly recommend using honey peanut butter instead of adding any additional honey. The flavor is phenomenal!
